The first edition of the Brazilian Pastry Conference (CBC) aims to frame pastry as a profession, a business and a strategic sector in Brazil. Created by Alyne Mundt Bill, founder of Feito Chocolate, the event takes place on January 26, 2026, at Teatro Bom Jesus in Curitiba, with a live online stream.

Inspired by the TED Talks format, the conference offers an afternoon of curated content featuring short, thought-provoking presentations grounded in market realities. As a result, the agenda moves beyond technique and focuses on consumer behavior, brand positioning, market dynamics, technology and innovation.

“The event comes from the need to expand the conversation about pastry beyond techniques, putting the sector at the center of discussions about management, strategic vision and the future of the business. The idea is to create a space for qualified exchange among professionals who take pastry seriously and are looking for sustainable growth and professionalization,” says Alyne Mundt Bill.

CBC is supported by Feito Chocolate and suppliers such as Barry Callebaut, IRCA Group, BlueStar and Master Martini. In addition, the hybrid model allows both in-person attendance in Curitiba and online participation, enabling professionals across Brazil to follow the content in real time.

Confirmed speakers include Beto Madalosso, behind Curitiba projects such as Madá, Sambiquira, Magrela Café, Uma Ova Bar and Portal Tutano Gastronomia; Cilaine Rodrigues from Docis (São Paulo); Gustavo Lorenzon from Pastry Lab; Jessika Damarate from Confeitaria Damarate; Johnlee Francis from Délices de Sucre; and Julia Postigo from Laboratório de Confeitaria.

Also joining are Júnior Broiato and Giovani Tosi from Baudelaire Cookies (Apucarana); Mara, founder of Mara Cakes and the Mara Cakes Fair (São Paulo); Meire Lousa from the traditional Loja Santo Antônio (São Paulo); plus Vanessa Lima and Tomás Santos from Boutique do Pão de Ló (Santa Catarina). Masters of ceremonies are Aline Gonçalves, pastry chef at Qoya Hotel and a contestant on MasterChef Confeitaria 2, and Thomas Gehlen, a Curitiba-based instructor and reference in creative pastry.
