Three elements, one pleasure
At its core lies a 160g artisanal burger of juicy beef, seared to the customer’s preferred doneness. On top, the harmony between creamy cheddar and bold gorgonzola creates an irresistible duo. Caramelized red onion adds sweetness, while arugula brings freshness. Everything is wrapped in a handcrafted brioche bun, finished with Dijon mayonnaise — the final touch for a burger full of personality.
Main ingredients
For the burger: 1 artisanal brioche bun 160g ground beef (house blend) Salt and black pepper to taste 2 slices of cheddar 30g gorgonzola
For the caramelized onion: 1 medium onion, thinly sliced 1 tablespoon butter 1 teaspoon brown sugar Pinch of salt 1 shot of cognac (30 ml)
For the Dijon mayonnaise: 1 egg 5 ml lemon juice 10 g mustard Salt and pepper to taste 1/2 garlic clove Parsley to taste 100 ml chilled oil 2 tablespoons Dijon mustard
Preparation method
Toast the artisanal brioche bun on a hot grill until golden and slightly crisp outside. Set aside. Shape the 160g burger, season with salt and black pepper, and sear on both sides to the desired doneness. Add cheddar and gorgonzola on top of the hot patty and let melt.
Caramelize the red onion over medium heat until soft and glossy. Assemble the sandwich: brioche base, Dijon mayonnaise, burger with melted cheese, caramelized onion, arugula and top bun. Serve immediately while hot.
