Casa Bambuí in Campos do Jordão launches a seasonal summer menu by chef Anouk Migotto, inspired by Mantiqueira ingredients.
The colors of summer bring lightness, freshness and a special charm to the new menu at Casa Bambuí, a must-stop for a memorable gastronomic experience signed by chef Anouk Migotto. The arrival of the season on December 21 inspires creations that highlight ingredients from the Serra da Mantiqueira.
The seasonal menu, available until March 20, brings vibrant flavors designed to celebrate warmer days. Located inside Parque Bambuí, one of the most beautiful leisure complexes in Campos do Jordão (SP), the restaurant combines fine dining and nature.
According to chef Anouk Migotto, one of the highlights of the new menu is the Mobile Box of Flavors and Colors of the Season. The creation pays tribute to one of Parque Bambuí’s artworks, Entre-Deux, a large mobile sculpture by French artist Christian Soucaret.
As a starter, the Mobile Box features small gastronomic surprises that express the freshness and diversity of the local fauna and flora. For summer, the novelties include smoked trout vol-au-vent and a savory macaron, also available in an alternative version.
The menu also brings new main dishes, such as a risotto with local parmesan-style cheese and duck with seasonal red berry sauce. These recipes reinforce the proposal of working with local ingredients in comforting and contemporary preparations.
Panela da Chef: seasonal specials
The well-known Panela da Chef continues the tradition of offering a different dish each season, served in a small copper pan. For summer, Casa Bambuí presents three new versions to please different palates.
Boeuf Hachè Mantiqueira – Minced filet mignon with fresh mushrooms and local mustard.
Moqueca Mantiqueira – Coconut milk, dendê oil and trout, a typical fish from the Mantiqueira region, with coriander to taste.
Lasanha Bambuí – Vegan pasta with seasonal vegetables and greens such as spinach, leek, basil and sage.
Desserts and refreshing drinks
Known for its comfort food approach, Casa Bambuí offers irresistible desserts on the new menu. Summer brings refreshing ice cream flavors, while classic desserts receive a special touch from seasonal fruits such as blueberry, raspberry and blackberry.
The restaurant’s drink menu also stands out, with refreshing cocktails made from seasonal fruits. A varied selection of wines and sparkling wines complements the experience and pairs with the dishes.
Parque Bambuí: nature and fine dining
With centenary trees, three lakes, sculptures spread across the lawns and a heritage train ride, Parque Bambuí, part of the Grupo Toriba, is an ideal destination for nature lovers. The complex brings together art, leisure and gastronomy in a single space.
