Copacabana Palace, A Belmond Hotel, introduces its iconic artisanal Christmas panettone, created by executive chef Nello Cassese. The 2025 edition features a special artistic touch: three limited-edition collectible tins designed by artist Gisela Pecego, blending the hotel’s classic sophistication with vibrant tropical elements.
Handcrafted in the hotel’s kitchen, the panettone follows authentic Italian tradition. Made with premium imported flour and a three-stage slow fermentation process, it offers a light texture, deep flavor and delicate aroma. Free from preservatives or artificial additives, it represents the exceptional craftsmanship that defines the Copacabana Palace gourmet experience.
Homemade candied fruits, natural vanilla pods and fresh eggs from free-range chickens ensure quality and care in every detail. “Each year I revisit the recipe, enhancing flavor and consistency while honoring Italian heritage and sharing a truly artisanal experience,” says chef Nello Cassese.
Art and tropical inspiration
Designed by Gisela Pecego, the exclusive tins reinterpret Copacabana Palace’s iconic façade through tropical motifs such as hibiscus, bananas, toucans, pineapples and seashells. “The watercolor technique evokes lightness and warmth. My goal was to unite sophistication with a joyful Brazilian spirit,” explains Pecego.
Celebration with purpose
In keeping with the hotel’s commitment to social causes, 10% of all panettone sales will be donated to Solar Meninos de Luz, a nonprofit providing education, culture and sports to children and youth in the Pavão-Pavãozinho and Cantagalo communities. The limited-edition panettone is available for purchase directly at the hotel.
