Award-winning chef debuts at Rio’s Itsáry with a fresh, creative menu inspired by local producers and Brazilian terroir.
Renowned chef Ignácio Peixoto takes charge of the kitchen at Itsáry, in downtown Rio de Janeiro, launching a new culinary chapter. His authorial and seasonal menu celebrates local farmers, fresh ingredients, and a deep link between product and territory.
“It will be a living kitchen, changing according to what arrives each day — a space for creativity,” says chef Ignácio Peixoto.
The word Itsáry comes from the Xavante language and means “roots,” reflecting the restaurant’s philosophy. Its open kitchen invites guests to watch the chefs in action, while the dining area creates an intimate refuge in the heart of Rio, between the OAB building and Santos Dumont Airport.
Menu driven by seasonality
The focused seasonal menu changes according to ingredient availability. Highlights include the Oyster Cream (R$35) with smoky oysters, pickled chayote, green apple, and toasted chili oil, and the Roasted Beetroot (R$45), served with goat cheese, nuts, and a wild honey ferment aged for eight months.
Mains include Slow-Cooked Short Rib (R$79) with cassava and Canastra cheese, Pork Tenderloin (R$59) with bean purée and cambuci farofa, and the Fish of the Day (R$79) accompanied by grilled zucchini and coconut beurre blanc.
Roots and career
Peixoto works with ingredients sourced from the Rio coast and small producers he’s cultivated relationships with throughout his career. “I know where my food comes from,” he says. Key suppliers include Fazenda Genève (Teresópolis), Fazenda Ponte Velha (Medeiros, MG), and Mawi Farm (Rio’s mountain region).
At 36, the Rio-born chef has worked alongside Felipe Bronze and Pedro de Artagão, earning the title of Revelation Chef from Veja Rio’s Comer & Beber awards. Now, in 2026, he debuts his first fully authorial kitchen at Itsáry, expressing total creative freedom.
