Illycaffè, famed for sustainable high-quality coffee, appoints Johannes Nuding to its illy Chef Ambassador program. He leads the Schwarzer Adler restaurant in Hall, Tyrol, Austria, sharing a commitment to top-tier excellence and ingredient respect.
Nuding honed his skills in Europe’s top kitchens with legends like Joël Robuchon and Pierre Gagnaire. As Executive Chef at London’s Sketch, he earned three Michelin stars. In 2022, with wife Lilit, he revived the historic Schwarzer Adler, emphasizing local, seasonal ingredients through innovative, eco-conscious cuisine.
In 2025, the restaurant secured two Michelin stars, affirming its path. This mirrors illy’s approach, selecting prime Arabica origins and enhancing them via expert craft.
