Restaurant in Campos do Jordão launches a refined summer menu inspired by European cuisine and seasonal freshness.
Küche, the restaurant at Hotel Ort in Campos do Jordão, presents its new summer menu starting November 10. The concept combines the lightness of the season with the sophistication of Western European gastronomy, highlighting seasonal ingredients and the creativity of chef Edmar Mendonça.
Ranked among Brazil’s best restaurants — named the 8th best fine dining restaurant in the Travellers’ Choice 2024 Awards — Küche reinforces its excellence through elegant, balanced dishes. “The inspiration came from Europe, focusing on lighter preparations and seasonal ingredients. The result is a menu that blends freshness, creativity, and flavor,” says the chef.
Creative and balanced flavors
Highlights among the starters include grilled shrimp with goat cheese cream and watermelon salad, and grilled scallops with mango cream, yogurt, and coconut crumble, offering tropical notes that harmonize perfectly with summer.
In the pasta section, the standout is the purple gnocchi, vegetarian and gluten-free, made with purple sweet potatoes, Mantiqueira cheese cream, and pesto sauce. The pear risotto with filet mignon medallion, gorgonzola, walnuts, and demi-glace delivers a refined contrast of sweet and savory.
Main courses and shared experiences
For meat lovers, the grilled lamb rack with smoked eggplant, tahini cream, and tomato jam stands out as a signature dish. Other novelties include grilled ribeye with mushroom purée and garlic chips and herb-crusted medallion with mustard sauce.
The restaurant also introduces the Raclette Experience, designed for sharing: a selection of grilled ribeye, vegetables, prosciutto, and mini Italian baguettes — perfect for two.
Light and refreshing desserts
Among desserts, the Tiramisù Mille-Feuille, with coffee ice cream and mascarpone cream, brings a modern twist to a European classic. The Zitrone, featuring butter cake, white chocolate ganache, green apple compote, and lemon gel, adds a bright and refreshing touch for warm mountain days.
