Perfect Pizza and Olive Oil Pairing

Nestled amid the Serra da Mantiqueira mountains where Sabiá olive trees thrive, the new Pizzaria do Azeite Sabiá blends farming and fine dining. Marcelo Alvarenga’s design (Play Arquitetura) fuses local stone, wood, and glass with the stunning landscape.

World-renowned Italian pizzaiolo Dani Branca, ranked among the top 100 by The Best Pizza Awards, leads the culinary vision. He crafts doughs with long fermentation (24-48 hours) using Italian Caputo flour and slow baking for unique crunch.

“Pairing our pizza with Azeite Sabiá is a hit, and with visitors already coming to the farm, demand will be high,” says Dani Branca. Local tomatoes and zucchini come from Santo Antônio do Pinhal producers; fior di latte from southern Minas Gerais.

Streamlined Menu Highlights Freshness

The concise menu mixes classics and originals, elevated by Azeite Sabiá finish. Traditional Margherita (Italian pelati sauce, fior di latte, $16); Buffalo Mozzarella Margherita with basil pesto and almonds ($17); Diavola (fior di latte, spicy salami, $17).

Artisanal Calabresa with purple onion and oregano ($17); Da Horta (grilled zucchini and eggplant on pelati, $17); Palmito with fior di latte and parmesan ($17); Tonno (solid tuna, purple onion, olives, $17); Alicci (Italian anchovies, light garlic, $18). Prices in BRL.

Desserts: Cannoli filled with dulce de leche ($4 each or $6.50 for two); classic Tiramisù ($6.50).

Guided Farm Tours

Guided tour (1h, $15/person; free for under 10 or over 80): olive farming, extraction, sensory tasting. Drinks extra.
