At the next edition of the Wine Dinner do Copa, held on the last Friday of each month, Pérgula Restaurant welcomes chef Elia Schramm from Babbo Osteria, based in Rio de Janeiro.
The event takes place on November 28, starting at 7 PM, with a special wine pairing in partnership with Moët Hennessy.
The dinner features a menu created exclusively for the occasion, combining recipes from both restaurants.
The experience begins with four snacks: octopus croquette with nero aioli; smoked tongue empanada with foie gras; sea urchin and roe tartlet; and scallop with cupuaçu.
As starters, the chefs serve beetroot textures with goat cheese and caramelized pecan, and squid with pomodoro and potato.
The first course is a lobster raviolo with peas and caviar.
The main course features angus filet with escarole and provola.
For the pre-dessert, guests will be served a Piccolo Pistaccio Sundae.
The harmonized dinner ends with a Romeu & Julieta dessert.
Wine Pairing
The wine pairing is an essential part of the Wine Dinner.
Wines by Moët Hennessy were selected by the Copa sommelier, Ed Arruda.
Labels include Chandon Excellence Brut, Cloudy Bay Sauvignon Blanc, Cloudy Bay Pinot Noir, Terrazas Grand Chardonnay, Terrazas Grand Cabernet Sauvignon and Terrazas Late Harvest.
