January is a time to reset habits, and Hotel Santa Teresa MGallery is starting 2026 by embracing Veganuary. In tune with the global movement, the hotel’s Térèze restaurant, set in the charming hills of Santa Teresa, unveils a new vegan menu that celebrates the flavors of the land with a contemporary fine-dining touch. The Pool Bar also follows this light and conscious approach, adding plant-based options to its menu for guests seeking balance.

Created by chefs Luanna Malheiros and Jérôme Dardillac, the vegan menu at Térèze features starters and main courses that spotlight local ingredients and refined combinations. Highlights include the Mango and Lychee Ceviche, finished with pomegranate seeds and sweet potato chips, and the Truffled Mushroom Tartare with Hazelnut, two dishes that deliver freshness, texture and elegance in every bite.
Among the main courses, the star is the Chickpea Ragout with Smoked Tofu, Edamame, Carrot, Zucchini and Crunchy Herb Crumble. This 100% plant-based creation combines lightness with layered flavors, turning Veganuary into a generous and inventive fine-dining experience in Rio de Janeiro.
Plant-based bites by the pool
On the poolside deck, the Pool Bar broadens its plant-based offering with vegan bites designed for summer days. One of the standouts is the Duo Banana-da-Terra, a combination of crispy plantain chips and a plantain guacamole, perfect for sharing while enjoying the view over Rio.
To pair with this vegan snack, the bar introduces the refreshing Lemon Spritz, a cocktail made with limoncello, sparkling wine and tonic water. The harmony between vegan creations and signature drinks reinforces the idea of a light, conscious and sophisticated start to the year at Hotel Santa Teresa MGallery.
Veganuary: global movement gains strength in Brazil
With its new vegan menu, Hotel Santa Teresa MGallery reaffirms its identity as a hub for authorial cuisine that celebrates Rio’s territory and food diversity. By joining Veganuary, the hotel connects to an annual challenge created in 2014 by the British NGO of the same name, which invites people to dedicate one month to a vegan lifestyle and helps spread this way of living worldwide.
According to the organization, more than 25 million people took part in the challenge in 2025 alone. High-profile supporters such as Xuxa Meneghel, Luisa Mell, Paul McCartney, Billie Eilish and Joaquin Phoenix have helped bring Veganuary into the spotlight and inspire more conscious choices at the table.
