Every Thursday, Parallel in Belo Horizonte turns Iberian with open vermouth, rotating tapas, and the lively Spanish ritual of sharing at sunset.
In the heart of Lourdes, the Spanish-inspired restaurant Parallel has launched the Vermuteo — a celebration of the classic Spanish aperitif hour. Led by chefs Gabriella Guimarães and Guilherme Furtado, the event invites guests to enjoy handcrafted vermouth and shareable small plates every Thursday from 6 p.m.
The evening features open vermouth service paired with five weekly tapas. The house produces its own versions: a red vermouth aged for seven days in oak barrels with orange and cinnamon, and a white vermouth infused with wormwood, fennel, and Sicilian lemon peel blended with Chardonnay and dry vermouth.
From Spain to Belo Horizonte
The Vermuteo revives Spain’s late-afternoon ritual: meeting friends for drinks, appetizers, and laughter before dinner. Tapas include olives explosivas, patatas bravas, jamón croquetas, anchovies with tomato bread, and mussels in escabeche — all designed to pair beautifully with vermouth’s aromatic profile.
Chef Furtado explains that vermouth may have begun as a winemaking accident — a failed batch revived with sugar, alcohol, and herbs. Over time, it became a cultural icon across Spain and Italy and eventually spread worldwide.
“We wanted to revive the spirit of Spanish afternoons — where food and drink are a celebration of connection,” says chef Guilherme Furtado.
