Surfer chef rides a fresh wave at Arp Bar

Blending surf and haute cuisine, chef Camilo Tonello Vanazzi takes over Arp Bar’s kitchen with ocean-inspired dishes that echo the movement of the waves.

Based in Rio and originally from Santa Catarina, the 38-year-old chef finds his main source of inspiration in the sea and its changing tides. Now leading one of the city’s most charming beachfront spots, located on the ground floor of Hotel Arpoador, he opens a new chapter by the water, where the ocean helps define rhythm, colors and mood at the table.

With Italian and Brazilian roots, Vanazzi has built an international career that includes fine dining kitchens in Paris and the Fiji Islands, experiences that shaped his precise yet relaxed approach to cooking. In Rio, he headed Emile at Hotel Emiliano and contributed to its “Best French Restaurant” award from Veja magazine in 2020, reinforcing his reputation for refined, detail-oriented cuisine.

At Arp Bar, he promises to combine international techniques with Brazilian flavors, crafting a sensory menu rich in contrast, color and layered textures. “I want to translate the rhythm of the sea into taste and form,” says Vanazzi, who keeps surf and cooking as twin passions, focusing on fresh ingredients, vibrant plating and a laid-back oceanside atmosphere.
