Chef Manu Buffara unveils two new dishes at Aatma, the restaurant of Suryaa Curio Collection by Hilton in Alphaville Graciosa.
Just a few kilometers from Curitiba, the Suryaa Curio Collection by Hilton has become one of the most sophisticated and inspiring destinations in southern Brazil. The soul of Suryaa through flavor
At the head of the hotel’s gastronomy is Chef Manu Buffara, who leads Aatma, a restaurant whose name means “soul” in Sanskrit. The space embodies Suryaa’s philosophy: a sensory and emotional culinary experience deeply connected to the land and local ingredients.
Aatma now introduces two new dinner creations, reinforcing the culinary identity that has positioned the hotel among Brazil’s leading experiential destinations.
New dishes: technique, simplicity and sharing
The Agnoline de Ricota Azeda (R$ 77) features fresh pasta filled with artisanal ricotta, young corn sautéed in white wine with saffron, creamy cream and grilled shrimp — a dish that balances technique and simplicity.
The Copalombo (R$ 85) celebrates the act of sharing, with glazed pork served with pita bread, fresh curd, pickles and herbs, encouraging conviviality at the table.
“Aatma is the heart of Suryaa. Each dish reflects the territory, time and spirit of the hotel — it’s about finding beauty in the essential,” says Manu Buffara.
Architecture, nature and purpose
With contemporary architecture, spaces bathed in natural light and views of the Alphaville Graciosa golf course, Suryaa offers a new perspective on luxury.
