Shareables: crisp flavors, clean finishes
Leading the new shareable options is the Salmon Carpaccio, finished with olive oil, fleur de sel, and Sicilian lemon zest. The suggested match is Giaretta Nature sparkling wine, leaning into acidity and freshness.
Also featured is a White Fish Gravlax served with yogurt cream and pesto, alongside house-made focaccia. For pairing, the recommendation is Tormes Vinho Verde, chosen for its bright, easy-drinking profile.
For those craving crunch, the Crispy Fish comes breaded in panko, with rustic potatoes and tartar sauce. The house pairing points to Black River Sauvignon Blanc, aiming for balance between richness and vibrancy.
Salads take center stage in the summer menu
When the goal is a lighter main, salads move to the forefront of the summer menu. The Roast Beef Salad with gorgonzola and honey is suggested with Santalu Rosé Vino!, playing contrast and intensity.
A classic, the Caprese Salad with buffalo mozzarella and pesto is positioned as a go-to for warm days, paired with Don Bonifácio Pinot Grigio.
Solo plates and dessert: citrus, comfort, and a sweet finish
Among individual dishes, the highlight is fettuccine with shrimp in a creamy limoncello sauce. The suggested pairing is a Vino Brut sparkling wine, reinforcing the citrus-driven freshness.
Other menu standouts include Baby Beef and fettuccine with pesto and burrata, which the brand recommends with Vino Miles Pinot Noir for those who prefer red wine even in summer.
To end on a sweet note, the pick is Pear in Wine, served with coconut ice cream, dulce de leche, and a red wine syrup. The recommended match is a Tawny Port, extending the dessert’s aromas and warmth.
