Fights, returned dishes, and a kitchen with no direction — Erick Jacquin heads to São Paulo’s Alto de Pinheiros to save Boteco Malum from collapse.
The second episode of Pesadelo na Cozinha — Brazil’s adaptation of the British format Kitchen Nightmares — airs this Tuesday (March 3) at 10:30 PM on Band. French chef Erick Jacquin visits Boteco Malum, a neighborhood bar with 20 years of history in Alto de Pinheiros, one of São Paulo’s most vibrant western districts.
A business that lost its way
What Jacquin finds is a place in deep crisis. Owner Vera Reis has lost control of her own business. Constant staff conflicts, a blurred identity, and food that no longer lives up to the menu have pushed the bar to the edge.
The worn-out atmosphere tells the story of a place without direction. Years of lax management have stripped Boteco Malum of the character that once made it a local favorite.
“There are countless complaints — too much salt, wrong cooking, returned dishes. There’s no leader. The owner is not demanding the way she should be.” — Erick Jacquin
When chaos runs the kitchen
The team’s frustration has spilled into daily operations. Returned dishes, inconsistent seasoning, and a lack of culinary standards point to a deeper issue: an owner who never enforced accountability.
For Jacquin, the fix goes beyond technique. Boteco Malum needs to rediscover its identity — and that starts with leadership.
