Christmas Eve dinner in four courses
The Christmas Eve dinner, served on 24 December at 8 p.m., offers a four-course menu prepared with seasonal ingredients and refined techniques.
The couvert features sourdough bread with romanesca salsa, extra virgin olive oil, house-made butter and Arabic eggplant.
Among the starters, highlights include endive salad with blue cheese, caramelized walnuts and pears with orange emulsion.
The menu also brings stracciatella with confit cherry tomatoes, wild arugula, toasted orange, quinoa, cured ham and chili pepper vinaigrette.
Other options are mini romaine lettuce with shrimp, Sicilian lemon emulsion, Parmesan and brioche croutons, and beef tataki with bone marrow vinaigrette, red onion, chives and crispy bread.
For main courses, guests can enjoy stuffed pasta with ricotta and shrimp in champagne sauce with fresh basil.
The menu also includes grilled catch of the day with purple sweet potato purée, leek, fennel and gribiche sauce.
Another option is beef tenderloin tournedos with braised broccoli, truffle butter and almond rice.
There is also a selection of grilled vegetables with herb butter, crunchy nut farofa and truffled baroa purée.
To finish, desserts include Pain Perdu Manuzita, a special French toast served with milk ice cream and red berries.
The sweet menu also offers orange and rosemary cake, lightly grilled and served with toasted segments and yogurt ice cream.
A classic by chef Manu Buffara, the Brazil nut mille-feuille with whipped dulce de leche and sour cream completes the experience.
The Christmas dinner costs R$ 450 + 10% per person, with 20% discount for hotel guests, drinks not included.
New Year’s Eve with antipasti table and full menu
The New Year’s Eve dinner, on 31 December, begins with a generous antipasti table.
It features naturally leavened breads, charcuterie boards, a selection of Brazilian cheeses, fresh fruits, jams, honey and pistachio pesto.
The buffet also offers babaganoush, butter-bean hummus with crispy pita and lemon zest, confit tomatoes with buffalo mozzarella and Arabic eggplant.
Guests will also find Moroccan couscous with shrimp, heart of palm and almonds, smoked salmon with sour cream and organic potato salad with red onion and arugula.
The price is R$ 750 per person, with a 10% discount for guests, alcoholic drinks not included.
The passed appetizers include octopus salad with roasted tomatoes and chili pepper.
There is also cod escabeche with red peppers, raisins and roasted garlic, and beef tagliata with Dijon mustard.
Among the main courses, guests can choose roasted lamb with Arabic salad, mint and garlic yogurt.
Other dishes include cod rice with heart of palm vinaigrette and shrimp and plantain curry with baroa mousseline.
The menu also features roasted flank steak with coconut-milk cheese pirão and grilled broccoli, and black lentils with smoked pork shoulder and citrus farofa.
The dessert table closes the night with red fruit cheesecake, chocolate and almond tart, strawberries with meringue, baked cocada and Sicilian lemon pie.
Both on Christmas and New Year’s Eve, guests enjoy live jazz performances, adding an elegant soundtrack to the celebrations.
Festive brunch and stay packages
On 25 December and 1 January, celebrations continue with a special program open to the public.
From noon onwards, AATMA restaurant welcomes guests and visitors for a festive brunch with à la carte menu and relaxed atmosphere.
The proposal is to celebrate the spirit of renewal and seasonal flavors, while breakfast remains available for hotel guests and walk-ins.
