Parrilla sandwiches are the new star at Cantuca, with six fire-grilled recipes starting at \(R\$ 33\) in Curitiba.
At Cantuca Brasero & Bar (also known locally as Cantuca Braseiro e Bar), the sandwich is no longer an afterthought. The steakhouse, recognized for its grilled meat boards, is drawing attention for “hands-on” sandwiches served as full plates.
Parrilla between bread
The idea is simple and bold: take South American grill traditions and push them into a format that’s easy to eat, yet still built on smoke, char, and texture. The lineup totals six sandwiches cooked over live fire.
Six picks and prices
The cupim sandwich (\(R\$ 46\)) features shredded beef, sautéed mushrooms, cheese, and the house mayo on a baguette.
The rib sandwich (\(R\$ 44\)) comes with caramelized onions, arugula, and cheese, balancing richness with freshness.
For burger fans, the Parrilla Burger (\(R\$ 38\)) stacks a 180 g rib burger on a brioche bun with cheddar and caramelized onions.
The Pastrami Burger highlights pastrami: rib burger plus pulled pastrami, pickles, and the house mayo (\(R\$ 54\)).
There’s also the classic pastrami sandwich (\(R\$ 59\)), served on naturally fermented bread with mustard mayo and house-made pickles.
Rounding it out, the choripán (\(R\$ 33\)) nods to Uruguay: parrilla sausage, cheese, paprika mayo, and the house chimichurri.
“Com receitas inspiradas na tradição das parrillas sul-americanas e ingredientes preparados na brasa, os nossos sanduíches mostram que o formato criado há séculos continua atual e pode ocupar lugar de destaque à mesa, com um altíssimo nível de excelência”, destaca o empresário Luís Otávio Pires, responsável pelo sucesso do Cantuca ao lado de Matheus Sperandio e Silvio Mariz Neto.
Where the sandwich idea took off
Across cultures, bread-and-filling combinations have existed for centuries. Still, the sandwich became widely popular in 1762, linked to English aristocrat John Montagu, the 4th Earl of Sandwich, who chose meat between slices of bread so he could eat without pausing long card games.
The name traces back to the town of Sandwich in Kent, in southeast England. Since then, the format has traveled the world and keeps evolving — including over open flames.
