Bonomi puts Florianópolis on Brazil’s new culinary map

Only finalist from Santa Catarina, Bonomi competes for Best Southern Restaurant at Prazeres da Mesa 2026 with its original, flavor-driven menu.

Unpretentious and informal, yet technically refined and full of flavor — this defines Bonomi, the Florianópolis restaurant announced as a finalist for the Prazeres da Mesa 2026 Award in the Best Southern Restaurant category. It’s also the only representative from Santa Catarina.

Opened in April 2023 in Rio Tavares, Bonomi quickly gained a loyal following with its simple mission: deliver excellent food without complication. Chef Rafael Sinko says the nomination came as a delightful surprise. “It’s the validation of work built outside traditional axes and guided by purpose,” he explains.

Having cooked at D.O.M., Tuju, and Boragó (Chile), Sinko brings a contemporary and label-free approach. “My goal is to make food that makes you crave another bite,” he says.

Inspired by Quimet & Quimet (Barcelona) and L’Avant Comptoir (Paris), Bonomi focuses on few elements, excellent ingredients, and full-on flavor. The menu evolves daily, highlighting local products, seasonal seafood, and natural wines from small producers.

Sinko sees Florianópolis as an emerging hub of creativity. “There’s a lot of traditional cuisine, but room for diversity and new ideas,” he notes.

More than a personal recognition, Bonomi’s nomination celebrates a vibrant southern Brazilian food scene. Organized by Prazeres da Mesa magazine, the award honors those shaping the future of Brazilian cuisine. Public voting is open until May 3.
