A Night of Fine Wine and Gastronomy

Tangará Jean-Georges, the one-Michelin-star restaurant inside São Paulo’s Palácio Tangará, is hosting an enogastronomic dinner on Thursday, April 2nd. The event, bearing the signature of chef Jean-Georges Vongerichten, unfolds as a six-course sensory journey designed around precise pairings of contemporary cuisine and internationally acclaimed wines.

The wine selection features iconic labels including Don Melchor, Amelia, and Château Haut-Bergeron, each chosen to reflect distinct terroirs and styles.

The Six-Course Menu

The dinner opens with a flounder tartare paired with Amelia Chardonnay 2024, whose acidity and minerality create a refined contrast. Next, crispy octopus with romesco and spiced coleslaw is matched with Amelia Pinot Noir 2023. The third course revisits the Chardonnay alongside sea bass with a seed crust and bittersweet jus, balancing texture and freshness.

For the main courses, spiced duck magret with coconut and lemongrass is served with Don Melchor 2021, while a herb-crusted rack of lamb with mint salsa and grilled nira is elevated by Don Melchor 2022. The evening closes with a chocolate moelleux layered with cardamom, cumaru, and buckwheat, harmonized with the refined Château Haut-Bergeron 2014.

Designed as a six-course sensory journey, the dinner highlights precise pairings between contemporary recipes and internationally prestigious wines.
