A cross-cultural dining experience is set to take place in Rio. On May 27, Signatures, the restaurant داخل Le Cordon Bleu in Botafogo, will host a six-course dinner designed to merge French precision with the warmth of Italian cuisine.
A dialogue between two cuisines
The menu is crafted by chefs Yann Kamps, Philippe Brye, and Mbark Guerfi, who propose a structured journey through contrasting yet complementary culinary traditions. The focus goes beyond flavor pairing, aiming to highlight how technique and cultural identity interact on the plate.
Set inside Le Cordon Bleu, the restaurant provides a fitting backdrop. The space reinforces a commitment to craftsmanship, where classical foundations meet contemporary interpretation.
The six-course progression
The evening opens with a parmesan arancini served with ragu and tomato confit foam, establishing a balance between richness and refinement. It is followed by a scallop carpaccio with Sicilian lemon and bottarga, bringing freshness and brightness.
The third course introduces a more comforting profile: an open raviolo filled with ricotta and spinach, finished with beurre noisette, sage, and hazelnuts. The dish builds depth while maintaining a delicate structure.
Main course highlight
The centerpiece of the menu is a magret of duck served with Chianti wine sauce, roasted carrot purée, and glazed vegetables. It reflects a careful balance between French technique and Italian influence.

A refined finish
A limoncello granita with prosecco jelly acts as a palate cleanser before dessert, resetting the experience for the final course.
To close, guests are served a chocolate and hazelnut entremet paired with zabaione gelato, delivering a layered and balanced ending to the meal.
